
A hands-on fish and meat processing workshop, organized by experts of “FoodArt” project, will take place on February 8, 2012, at Tartu Vocational Center kitchen. The workshop will bring together professionals from Estonia and Latvia that are producing and processing fish and meat products.
Part of the workshop will focus on how catering business purchase ingredients and what aspects are important to them as well as the place on the menu and ways to use fish and meat products. The hands-on training this time will focus on making sausages, salting, drying and smoking of fish and meat. There will also be a tasting opportunity at the end of the workshop.
